Lamb Shank with White Beans Tuscan Style
Ingredients
- Rack of Lamb - 31.7 oz
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Celery stalk - 2 pieces
- Carrot - 2 pieces
- Garlic - 3 heads
- Fresh Rose Hips - 2 sprigs
- Spiced Tomato Juice - 14.8 oz
- Water - 8 fl oz
- White Beans - 1.8 oz
- Chopped Sage Leaves - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
In a pressure cooker, heat the oil over low heat. Season the meat with salt and pepper, then sear it well on all sides and place the shanks on a plate.
Step 2
Chop the onion, carrot, and celery, and slice the garlic thinly. Add all of this to the pressure cooker and sauté for about 6 minutes until golden brown. Add the diced tomatoes along with their juice and rosemary, and cook, stirring, for about a minute. Then stir in the beans, water, half a teaspoon of salt, and 1/4 teaspoon of pepper.
Step 3
Return the meat to the pot, bring to a boil, cover with a lid, and simmer for about 30 minutes. Place the pressure cooker in the sink and run cold water over the lid until the pressure is fully released. Open the lid and remove the rosemary. On a cutting board, cut the meat into pieces.
Step 4
Transfer the beans and vegetables to a large bowl, top with pieces of meat, drizzle with sauce, and garnish with chopped herbs.
