Ingredients
- Rack of Lamb - 4 pieces
- Garlic - 1 head
- Ground Black Pepper - 0.4 oz
- Pickled garlic - 1.1 oz
- Raisins - 1.8 oz
- Pickled Apples - 1.8 oz
- Saffron - a pinch
- Carrot - 1 piece
- Allspice berries - 3 pieces
- Couscous - 3.5 oz
- Butter - 5.3 oz
- Spanish onions - 7 heads
- Cilantro - 1.8 oz
- Salt - to taste
Step by Step guide
Step 1
Clean the lamb shanks from the membrane, rinse, dry, and season with pepper. Sear on all sides in a very hot skillet with a small amount of sunflower oil. Meanwhile, in a cast iron pot (or a Dutch oven), heat coarsely chopped onion rings (4 heads) in a small amount of boiling water with 100 g of butter and add allspice. Place the seared shanks on top of the onion, add the carrot cut into petals, cover with another layer of onion (3 heads), season with salt, and let it simmer on low heat for 30 minutes, adding boiling water as needed.
Step 2
After 30 minutes, add 50 g of butter, saffron, chopped cilantro, raisins, dried apples, and ginger. Without peeling, make cuts in the garlic cloves and add them to the meat. Let it simmer on low heat for another 30 minutes, adding boiling water as needed.
Step 3
For the side dish, in a skillet, melt butter and olive oil, and sauté finely chopped ginger and garlic on low heat. Pour in a little boiling water and add the raisins. Add the couscous to the skillet with the mixture, stir, season with salt, add a bit more boiling water, mix, cover with a lid, and turn off the heat. Serve drizzled with the sauce from the main dish and sprinkled with fresh cilantro.
