Lamb Shoulder Shashlik in Aromatic Marinade
Ingredients
- Lamb Shoulder - 4 lbs
- Onion - 21.2 oz
- Salt - 0.7 oz
- Sugar - 0.7 oz
- Khmeli-suneli - 0.7 oz
- Ground Black Pepper - 0.7 oz
- Meyer Lemon Juice - 0 fl oz
- Cilantro - 2.1 oz
- Tomatoes - 21.2 oz
- Passata Tomato Sauce - 1.8 oz
- Sparkling water - 2 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Slice the onion into strips, add salt, sugar, khmeli-suneli, black pepper, and lemon juice. Mash well with your hands to release the onion's juice.
Step 3
Chop the cilantro coarsely and add it to the onion.
Step 4
Chop the tomatoes randomly and add them to the mixture, then pour in the tomato paste and sparkling water, and mix well.
Step 5
Cut the lamb shoulder into 4–5 cm cubes, place them in the marinade, and mix thoroughly.
Step 6
Cover the container and leave it in the refrigerator for 24 hours.
Step 7
Thread the marinated meat onto skewers, alternating with the onion from the marinade.
Step 8
Light the coals in the grill and wait until they are covered with white ash, without open flames.
Step 9
Grill the shashlik, turning constantly, for 15–20 minutes, until golden brown. You can periodically sprinkle with lemon water to keep the meat juicy.
Step 10
Serve the finished shashlik with lavash, fresh vegetables, and herbs.
