Lamb Shoulder Sous Vide
Ingredients
- Lamb Shoulder - 1 piece
- Prunes - 12.3 oz
- Soy Sauce - 10 fl oz
- Chicken Broth - 1 qt
- Thyme - 5 sprigs
- Rosemary - 3 sprigs
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
In a blender, combine prunes, thyme leaves, and rosemary, then add the broth and soy sauce.
Step 3
Blend everything together until smooth.
Step 4
Pour the resulting marinade over the lamb shoulder and let it marinate in the refrigerator for a day, or preferably two.
Step 5
Place the lamb shoulder along with the marinade in a vacuum bag.
Step 6
Cook sous vide at 176°F for 12 hours.
Step 7
The cooked lamb can be served immediately with the sauce it was cooked in, or you can place it in an oven preheated to 392°F for 15–20 minutes to create a delicious crust.
Step 8
Remove the meat from the bone and serve with the sauce and vegetable garnish.
