Ingredients
- Lamb Shoulder - 2 lbs
- Garlic - 1 head
- Paprika - 2.5 oz
- Garlic chips - 2.5 oz
- Rosemary - 3 sprigs
- Thyme - 3 sprigs
- Basil - ½ bunches
- Cilantro - ½ bunches
- Olive Oil - 4 spoons
- Salt - to taste
Step by Step guide

Remove the market seal from the spatula, if there is one.
Step 2
Crush the garlic after peeling it.
Step 3
Prepare the spread: combine crushed garlic, onion powder, garlic powder, smoked paprika, and 4 tablespoons of olive oil, mixing them together to create a paste similar to Georgian adjika.
Step 4
Place the meat on a large sheet of foil and thoroughly coat it with this mixture.
Step 5
Make incisions in the shoulder and stuff it with sprigs of fresh rosemary and thyme — lamb loves those aromatic notes.
Step 6
Wrap the shoulder in a large bag made of double-layer aluminum foil and place it in an oven preheated to 338°F for one hour.
Step 7
Serve whole, garnished with coarsely chopped basil and cilantro.
