Lamb Steak with Herbs
Ingredients
- Parsley - 1 bunch
- Rack of Lamb - 28.2 oz
- Garlic - 1 clove
- Ground Black Pepper - to taste
- Salt - to taste
- Egg white - 1 piece
- Olive Oil - 0 fl oz
Step by Step guide
Step 1
Finely chop the parsley.
Step 2
Finely chop the garlic.
Step 3
Mix the ground lamb with the chopped parsley and dill, add salt, pepper, egg white, and oil.
Step 4
Thoroughly mix the entire mixture by hand.
Step 5
Shape the steaks, squeezing them tightly by hand for density.
Step 6
Pack in a bag using a vacuum sealer (zip lock bags can be used).
Step 7
Place in a sous-vide device or multicooker for 60 minutes at a temperature of 64–154°F, depending on the desired doneness.
Step 8
If desired, the steaks can be briefly seared over an open flame, such as from a gas torch, or pan-fried to achieve a golden crust.
