Ingredients
- Rack of Lamb - 14.1 oz
- Bulgur - 3.5 oz
- Butter - 0.7 oz
- White Balsamic Cream - 1.8 oz
- Arugula - 10 pieces
- Courgette - 1 piece
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
In a pot, heat half of the butter, add the bulgur, and mix thoroughly. Pour 200 ml of salted hot water into the pot, cover with a lid, and cook on low heat for 15 minutes.
Step 3
Season the lamb with salt and pepper, sear it on each side, and bake in the preheated oven for 15–20 minutes.
Step 4
Slice the zucchini lengthwise (you will need 4 strips), and chop the remaining zucchini finely. Heat 2 tablespoons of vegetable oil in a pan and sauté the zucchini strips on both sides, then transfer to a plate. Sauté the remaining chopped zucchini until golden, add the bulgur, and sauté everything together with the remaining butter for 2–3 minutes.
Step 5
On a plate, arrange the zucchini strips, top with bulgur, place the lamb next to it, add arugula leaves, and serve with the sauce.
