Lamb with Herb and Cheese Crust

Ingredients

  • Garlic - 1 clove
  • Fresh basil leaves - ½ piece
  • Cake crumbs - 0.3 cup
  • Grated Pecorino Pepato Cheese - 1.1 oz
  • Herbes de Provence - 2 tablespoons
  • Olive Oil - 2½ tablespoons
  • Dijon Mustard - 1½ tablespoons
  • Rack of Lamb - 24.7 oz

Step by Step guide

Step 1

In a food processor, chop the garlic and add the basil, grated cheese, breadcrumbs, herbes de Provence, and mustard. Blend well and pour in the olive oil. Mix thoroughly.

Step 2

Preheat the oven to 428°F. Season the lamb with salt and pepper. Place the meat on a small baking tray and sprinkle the breadcrumbs on top, pressing them down slightly. Roast the meat for about 35 minutes, until the internal temperature reaches 135°F. Remove from the oven and let it rest for 15 minutes.

Step 3

Transfer the meat to a cutting board and cut it into 2 pieces. Arrange on plates and serve.
