Lamb with Rosemary, Zucchini, and Mint

Ingredients

  • Lamb - 12.7 oz
  • Garlic - 12 cloves
  • Rosemary - 0.2 oz
  • Black Cumin (Cumin) - 0.1 oz
  • Courgette - 8.8 oz
  • Mint - 0.1 oz
  • Lime - 1 piece
  • Olive Oil - 2 fl oz

Step by Step guide

Step 1

Crush the garlic, peel it, and mash it into a paste; separate the rosemary leaves from the stem; mix the cumin with the garlic and rosemary, add salt, 2 tablespoons of olive oil, and mix well.

Step 2

Wash the meat, dry it, and coat it on all sides with the olive-garlic dressing, let it marinate for 10–15 minutes, and sear on a hot grill pan over high heat for 1 minute on each side.

Step 3

Transfer the lamb to a preheated oven at 302°F (300 degrees Fahrenheit) and roast for 15–20 minutes, then let it rest for 7 minutes.

Step 4

Slice the zucchini into thin long strips and sauté in batches on the grill pan over high heat for 1 minute on each side, season with salt and pepper.

Step 5

Chop the mint; squeeze the lime for juice.

Step 6

Cut the lamb into pieces.

Step 7

Arrange the lamb and zucchini on a plate, drizzle with lime juice, sprinkle with olive oil, and top with mint before serving.
