Ingredients
- Olive Oil - 1 tablespoon
- Onion - 1 head
- Garlic - 3 cloves
- Mild Chili Spice - 3 pieces
- Ground Cumin - 2½ teaspoons
- Rack of Lamb - 15.9 oz
- Passata Tomato Sauce - 14.1 oz
- Campbell's Beef Broth - 2 fl oz
- Cilantro - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the olive oil in a deep and spacious skillet over medium heat, add the chopped onion, garlic, and chili (first, remove the seeds and stems from the peppers), and sauté the vegetables for three to five minutes until soft, then add the cumin and mix well.
Step 2
While the vegetables are sautéing, cut the lamb into small pieces, season with salt and pepper to taste.
Step 3
Add the meat to the skillet with the vegetables and sauté everything together, stirring, for about five more minutes. Then add the tomato sauce and pour in the broth. Stir again, increase the heat, and bring the contents of the skillet to a boil.
Step 4
Cover the skillet with a lid, reduce the heat to low, and simmer until cooked through—about forty to forty-five minutes.
Step 5
Season the cooked meat again with salt and pepper and sprinkle with chopped cilantro just before serving.
