Ingredients
- Orange Bell Peppers - 2 pieces
- Eggplants - 1 piece
- Olive Oil - 3 tablespoons
- Ground coriander - 2 teaspoons
- Cardamom - 1 teaspoon
- Ground Cumin - 3 teaspoons
- Ground Cinnamon - ½ teaspoon
- Cilantro - 3 tablespoons
- Rack of Lamb - 26.5 oz
- Spanish onions - 1 head
- Vegetable Oil - to taste
- Country Bread - 8 slices
- Baba ganoush - 7.1 oz
- Arugula - 2.1 oz
- Garlic - 3 cloves
- Mayonnaise - 4.4 oz
Step by Step guide
Step 1
Preheat the grill well. Cut the peppers into quarters and remove the seeds. Place on the grill, skin side up, and grill until browned. Transfer to a plastic bag, cool, and peel off the skin.
Step 2
Meanwhile, slice the eggplant into 8 thin pieces, drizzle with oil, place on the grill, and grill for 2-3 minutes on each side until soft. Transfer to a plate.
Step 3
In a dry skillet, toast the ground spices over medium heat for 1 minute until fragrant. Transfer to a bowl and add the chopped cilantro leaves, ground lamb, finely chopped onion, salt, and pepper. Mix well and shape into 4 flat patties, about 1 cm thick.
Step 4
Brush the grill with oil and grill the burgers for 4-5 minutes on each side.
Step 5
Meanwhile, toast the bread on both sides, spread baba ganoush on 4 slices, then layer with arugula, eggplant, peppers, and then the burgers. Mix the mayonnaise with minced garlic and drizzle over the meat. Top with the remaining bread and serve immediately.
