Description

A delightful recipe that requires butter to make caramel candies. Recipe from a local café.

Ingredients

  • Ground Coffee - 0.6 oz
  • Milk - 18 fl oz
  • Butter - 1.8 oz
  • Sugar - 7.1 oz

Step by Step guide

Step 1

The first thing we do is prepare the Iris sauce. It should taste like salted caramel, reminiscent of the toffee from childhood. In a saucepan, we place 50g of butter, melt it slightly over medium heat, and add 200g of sugar.

Step 2

Caramelize the sugar together with the butter until a smooth, thick consistency is achieved, then pour in the milk (300 g). The sugar will harden and become quite firm upon contact. Our task is to wait until the milk heats up and, while constantly stirring, dissolve the caramelized sugar in the milk.

Step 3

Simmer the sauce over low heat for 30 minutes. The result is a thick caramel sauce.

Step 4

Brew espresso. Double or standard – it's up to your taste.

Step 5

Froth the milk using a steam wand or a milk frother.

Step 6

Pour 50 grams of Iris sauce into the bottom of a glass. On top of the sauce, pour whipped milk, leaving 0.5 cm from the edge. Then, pour in the espresso over the milk; you can create a design and enjoy the wonderful signature drink, Iris Latte, from West4.
