Ingredients
- Beetroot - 1 piece
- Goat cheese - 1.8 oz
- Olive Oil - 2 teaspoons
- Pumpkin seed oil - 2 teaspoons
- Sugar - 1 teaspoon
- Balsamic Vinegar - to taste
Step by Step guide
Step 1
Boil the raw beetroot. It is better to choose a medium-sized elongated one. I recommend using a steamer for boiling.
Step 2
Peel the cooled beetroot and slice it thinly, about 2-3 mm.
Step 3
Prepare plates for serving.
Step 4
Grate the cheese on a fine grater.
Step 5
Heat the oil in a skillet, add a spoonful of sugar.
Step 6
Sauté and caramelize one slice on both sides for a bit, place it on a plate, drizzle a couple of drops of vinegar on top, sprinkle with cheese, sauté the next slice, place it on the cheese, add a couple of drops of vinegar, sprinkle with cheese, and so on. Layer 5-6 slices, let it cool slightly, and top with 1 teaspoon of grated cheese. Finally, season with 0.5 teaspoons of pumpkin oil.
