Layered Beetroot with Goat Cheese

- Beetroot - 2 pieces
- Goat cheese - 7.1 oz
- Fresh basil leaves - to taste

- Lemon - ½ piece
- Red Long Chili Peppers - a pinch
Step by Step guide
Step 1
Boil the washed beetroot in their skins (this will take about an hour). Once cooked, cool the beetroot, peel off the skin, and slice into thin rounds.
Step 2
Thinly slice the feta cheese. Drizzle lemon juice over each slice of beetroot, then place feta cheese and a spinach leaf on top. Repeat this for several layers, finishing with feta cheese on top and garnishing with basil leaves.
Step 3
To add some heat and color, lightly sprinkle with red pepper on top.
