Lazy Paella

Ingredients

  • Olive Oil - 8 fl oz
  • Onion - 1 piece
  • Potato - 1 piece
  • Bacon - 5.3 oz
  • Blood Sausage - 1 piece
  • Skin-On Chicken Breasts - 1 piece
  • Chorizo - 1 piece
  • Chickpea - 2.8 oz
  • Long-Grain Rice - 21.2 oz
  • Chicken Broth - 1 qt
  • Garlic - 1 clove
  • Parsley - 1 stem
  • Canned Mushroom Soup - 3.5 oz
  • Saffron - ¼ teaspoon
  • Orange Bell Peppers - 1 piece
  • Salt - to taste

Step by Step guide

Step 1

Chop the onion and tomato. Cut the bacon and chicken into cubes. Slice the blood sausage and chorizo, and cut the pepper into strips.

Step 2

Heat half of the oil in a pot, add the onion, and cook over low heat, stirring, for 5 minutes until it becomes soft and translucent. Add the tomato and cook, mashing it with a spatula, for another 5-10 minutes. Let it cool slightly, then transfer to a blender, puree, and return to the paella pan or a large heavy-bottomed skillet.

Step 3

Place the pot with the tomato puree over heat and add the remaining oil. When it heats up, add the bacon, chicken, half of the blood sausage, half of the chorizo, and half of the chickpeas. Stir in the rice and pour in the hot broth. Gently mix.

Step 4

Crush the garlic, parsley, and saffron in a mortar with a pinch of salt, pour in 2 tablespoons of warm broth, mix, and add to the paella. Cook for 15 minutes, then add the peas, remaining meat, chickpeas, and strips of red pepper. Cook for another 5 minutes or until the broth is fully absorbed and the rice is tender.

Step 5

Place a damp towel on the table. Set the skillet with the paella on it. Let it sit for 5 minutes. Then serve – directly from the skillet.
