Ingredients

  • Pumpkin - 2 lbs
  • Pumpkin seed oil - 1.8 oz
  • Butter - 1.8 oz
  • Ghee - 1.8 oz
  • Olive Oil - 1 fl oz
  • Sugar - 1 tablespoon
  • Mixed salad greens - 5.3 oz
  • Black Cumin (Cumin) - ¼ teaspoon
  • Paprika - ¼ teaspoon
  • Cayenne Pepper - ¼ teaspoon
  • Cinnamon - ¼ teaspoon
  • Narshehab sauce - 1 tablespoon
  • Spanish onions - 1 head
  • Salt - to taste
  • Vegetable Oil - 1 fl oz
  • Ground Black Pepper - to taste
  • Couscous - 7.1 oz
  • Black Pomegranate Molasses - ½ piece
  • Champagne Vinegar - 2 tablespoons

Step by Step guide

Step 1

Cut the pumpkin into large pieces. Drizzle with olive oil. Season with salt and pepper. Mix to ensure the oil, salt, and pepper are evenly distributed over the pumpkin.

Step 2

Place the pumpkin on a baking sheet. Bake in an oven preheated to 392°F for 10-15 minutes.

Step 3

Pour the couscous into a deep bowl, add melted butter, and rub the grains with your hands until the oil is fully absorbed. Pour boiling water over it, stir with a spatula, cover with a lid, and let it sit for 2-3 minutes.

Step 4

While the couscous is resting, prepare the sauce. Melt the butter in a saucepan, add a pinch of cinnamon, a pinch of cumin, paprika, and cayenne pepper. Add the pumpkin seeds to this boiling mixture and a pinch of sugar. Sauté for a minute or two, stirring constantly. Transfer to a separate container.

Step 5

Add more melted butter to the rested couscous and mix again.

Step 6

Finely chop the onion. Transfer to a salad bowl, add olive oil, a bit of sherry vinegar, and narsharab sauce. Season with salt and pepper. Mix with a fork.

Step 7

Peel the pomegranate, remove the seeds, and add them to the couscous.

Step 8

Transfer the cooked pumpkin to a bowl, drizzle it with the pumpkin seed dressing and the onion-pomegranate mixture. Gently mix. Add the mixed salad greens and mix again. Serve this salad-pumpkin mixture around the couscous on a platter.
