Description
Once again, I am replacing my favorite measurement 'a handful' with 'a bunch': you need 3 bunches of basil leaves. Of course, you can substitute a mortar and pestle with a blender.
Ingredients
- Fresh basil leaves - 3 bunches
- Pistachios - 1.1 oz
- Grated Pecorino Pepato Cheese - 1.1 oz
- Garlic - 1 clove
- Olive Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Crush the garlic in a mortar with a couple of pinches of salt, add the basil leaves, and crush.
Step 2
Add the pine nuts and grind until smooth. Transfer everything to a bowl, add the Parmesan and 1–2 tablespoons of olive oil, season with pepper, and mix well.
Step 3
The sauce is ready, and you can adjust it to your desired consistency by adding more olive oil.
