- New Potatoes - 17.6 oz
- Orange Bell Peppers - 2 pieces
- Spanish onions - 1 head
- Olive Oil - 1 teaspoon
- Chicken fillet - 4 pieces
- Bay leaf - 4 pieces
- Lemon - 4 slices
- Chicken Broth - 3 fl oz
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
In a baking dish, place the sliced bell peppers, diced potatoes, and chopped onion. Season with salt and pepper to taste, drizzle with olive oil, and mix. Place in the oven for 20 minutes, then reduce the temperature to 392°F.
Step 3
Remove the dish with the vegetables. Season the chicken with salt and pepper. Place it on top of the vegetables. On each piece of chicken, place a bay leaf and a thin slice of lemon. Drizzle with broth and return to the oven for 25-30 minutes, periodically basting the chicken and vegetables with the juices that have released.
