  • Ground Black Pepper - to taste
  • Grated Lemon Zest - ¾ teaspoon
  • Lemon Juice - 2 tablespoons
  • Olive Oil - 3 tablespoons
  • Dijon Mustard - ½ teaspoon
  • Dried tarragon - 1 teaspoon
  • Bell pepper - 2 pieces
  • Lentils - ½ cup
  • Green onions - 4 stalks

Step by Step guide

Step 1

In a medium-sized pot of boiling salted water, cook the lentils until fully tender for about 15 minutes.

Step 2

Then, drain the water and set the lentils aside to cool.

Step 3

In a bowl, whisk together the lemon zest, lemon juice, oil, mustard, and tarragon.

Step 4

Once everything is well combined, add the lentils, dried bell pepper, and green onions.

Step 5

Season with salt and pepper to taste. The salad should be served cold.
