Lemon Pasta with Pine Nuts and Thyme
Ingredients
- Spaghetti - 17.6 oz
- Garlic - 1 clove
- Chopped Sage Leaves - 1.9 oz
- Olive Oil - 2 fl oz
- Lemon - 2 pieces
- Toasted Sesame - 2 fl oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Grate the zest of the lemons using a fine grater, then squeeze the juice.
Step 2
In a bowl, mix the olive oil, chopped garlic, thyme, zest, and juice of the lemons. Season with salt and pepper. Add the toasted pine nuts and mix well. Let it sit for about 1 hour.
Step 3
Then, cook the pasta in a pot of boiling salted water until al dente. Drain, reserving 240 ml of the pasta water.
Step 4
Transfer the lemon sauce to a saucepan and place over high heat. Add a bit of the reserved pasta water. Heat well without bringing to a boil, then remove from heat.
Step 5
Serve the pasta and drizzle with the sauce. Generously sprinkle with freshly ground black pepper and serve.
