Lemon Soup with Shrimp

Ingredients

  • Cilantro - ¼ cup
  • Onion - 1 head
  • Chicken Broth - 4 cups
  • Habanero Pepper - 2 pieces
  • Garlic - 8 cloves
  • Toasted Cumin Seeds - ½ teaspoon
  • Cinnamon - 1 piece
  • Grated Lemon Zest - 3 tablespoons
  • Peeled Cooked Shrimp - 17.6 oz
  • Ground clove - 4 pieces
  • Meyer Lemon Juice - 3 tablespoons
  • Salt - ½ teaspoon
  • TABASCO® - to taste

Step by Step guide

Step 1

In a pot, pour in the broth and add the onion cut into quarters, halved jalapeño, garlic, lemon zest, cumin, cinnamon, and cloves. Bring to a boil, cover, reduce heat, and simmer for 20 minutes. Then strain.

Step 2

Pour the broth into a clean pot, bring to a boil, and add the raw, peeled shrimp, lemon juice, and TABASCO (if desired). Cook for about 3 minutes until the shrimp are done.

Step 3

Remove from heat and stir in the cilantro.
