Lentil and Porcini Mushroom Stew
Ingredients
- Lentils - 7.1 oz
- Porcini Mushrooms - 5.3 oz
- Shallot - 3 pieces
- Olive Oil - to taste
- Turnips - 3 pieces
- Celery stalk - 1 piece
- Thyme - 1 sprig
- Basil - 1 bunch
- Garlic - 2 cloves
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the lentils and soak them for about one hour. Then boil them in water at a ratio of 1 part lentils to 2 parts water.
Step 2
Dice the vegetables (onion, carrot, celery) into small cubes and sauté them in a pan with olive oil until cooked. Set aside.
Step 3
Combine the mushrooms, garlic, and thyme in the pan and sauté in olive oil until cooked. Then remove the thyme and garlic, leaving only the porcini mushrooms in the pan.
Step 4
Mix all the ingredients in the pan and simmer for a couple of minutes, adding salt and pepper to taste.
Step 5
Before serving, garnish the dish with basil leaves.
