Ingredients
- Sweet Pepper - 1.4 oz
- Onion - 1.4 oz
- Carrot - 1.4 oz
- Garlic - 0.3 oz
- Thyme - 0.1 oz
- Demi-Glace Sauce - 5.6 oz
- Chicken Broth - 22 fl oz
- Lentils - 5.3 oz
- Smoked Brisket - 9.9 oz
- Sauerkraut - 2.8 oz
- Scallions - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the lentils and place them in an enameled cast iron pot. Add chicken broth (three parts broth for every one part of lentils) and simmer in the oven for 40 to 60 minutes at a temperature of 284°F.
Step 2
Finely chop the bell pepper, carrot, onion, garlic, and thyme, and sauté until golden brown. Add the demi-glace and chicken broth, and stir to combine.
Step 3
Finely chop the bacon and add it to the stewed lentils. Add the sautéed vegetables to the mixture. Place the dish in the oven for another 5–7 minutes.
Step 4
Serve the lentils garnished with pickled cabbage and finely chopped green onions.
