Ingredients
- Green French Lentils - 7.1 oz
- Feta cheese - 3.5 oz
- Red Onion - 1 head
- Tomatoes - 2 pieces
- Garlic - 2 cloves
- Cilantro - 1 bunch
- Olive Oil - 4 tablespoons
- Red Wine Vinegar - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the lentils under cold running water, place them in a pot, cover with cold water, bring to a boil, reduce the heat to low, and cook until tender. Do not salt the lentils during cooking, as this will make them tough. Salt only when they are fully cooked.
Step 2
Drain, cool, and transfer to a bowl.
Step 3
Add finely chopped onion, tomatoes (remove seeds), cilantro, and cubed feta to the lentils, and crush the garlic. Gently mix and serve.
