Ingredients

  • Lentils - 6.2 oz
  • Coconut Milk - 7 fl oz
  • Water - 23 fl oz
  • Tomatoes - 6.5 oz
  • Onion - 4.4 oz
  • Garlic - 0.5 oz
  • Ginger Root - 0.5 oz
  • Tomato Paste - 3.5 oz
  • Chili Pepper - 0.2 oz
  • Cilantro - 0.5 oz
  • Green Onion - 1.1 oz
  • Short-grain rice - 25.4 oz
  • Ground Cumin - 0 oz
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Soak the lentils for 2 hours.

Step 2

Sauté the onion, ginger, garlic, and chili pepper until golden brown. Add the tomato paste and spices. Cook on low heat for 5 minutes. Transfer to a pot and add the rinsed lentils.

Step 3

Add water, cover the pot with a lid, and simmer on low heat for 1 to 1.5 hours.

Step 4

Pour in the coconut milk and simmer until slightly thickened. At the end, add herbs and spices to taste.

Step 5

Serve the stew with boiled rice, garnished with cilantro leaves.
