Lentils with Greens

Ingredients

  • Lentils - 5.3 oz
  • Vegetables - 17.6 oz
  • Turnips - 2½ pieces
  • Onion - 1 piece
  • Leek - 1 piece
  • Celery stalk - 1½ pieces
  • Thyme - 1 bunch
  • Shallot - 3 pieces
  • Greens - 1 bunch
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Rinse the lentils in a sieve under cold water, transfer to a pot, and cover with plenty of cold water. Bring to a boil, drain in a sieve, and rinse again under cold water.

Step 2

Return the lentils to the rinsed pot, add half of the prepared vegetables and 250 ml of cold water.

Step 3

Peel the carrots (2 pieces) and cut them in half, peel the onion, cut it lengthwise, and then into quarters, coarsely chop the leek, and remove the fibers from the celery (1 piece) and cut it in half.

Step 4

Add the vegetables and thyme to the lentils. Stir, cover with parchment paper, and bring to a boil. Reduce the heat and let it simmer gently for 5–8 minutes until the lentils are half cooked. Drain in a sieve, remove the vegetables and thyme.

Step 5

Return the lentils to the rinsed pot and add the second half of the prepared vegetables. Add finely chopped shallots, celery, and carrots, and bring to a boil over medium or high heat. Reduce the heat and let it simmer uncovered for about 10 minutes until the liquid is exactly twice the amount of lentils.

Step 6

Add as much oil as desired (a little at a time), stirring until a glossy mixture forms. Add the greens, stir, season with salt and pepper. Serve immediately.
