Lentils with Rice 'Fakorizo'

Ingredients

  • Green French Lentils - 1 cup
  • Onion - 1 head
  • Olive Oil - 3 tablespoons
  • Tomato Paste - 2 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Long-Grain Rice - 1 cup
  • Cumin - to taste

Step by Step guide

Step 1

Rinse the lentils, sort them, place them in a pot, and cover with water, then bring to a boil and drain in a colander.

Step 2

Peel and finely chop the onion. In the pot where the lentils were cooked, heat the olive oil and sauté the onion until golden.

Step 3

Add the lentils to the pot, cover with water, add the tomato paste, season with salt and pepper, and cook on low heat until partially cooked (about 10 minutes).

Step 4

Rinse the rice, add it to the pot along with the cumin. Cook until the rice is done (about 10-15 minutes), adding hot water if necessary.
