Ingredients
- Boston Salad - 3 pieces
- Parmesan Cheese - 3.2 oz
- Radish - 12 pieces
- Garlic - 1 clove
- Sugar - ½ spoons
- Champagne Vinegar - ½ spoons
- Meyer Lemon Juice - 2 spoons
- Vegetable Oil - 2 fl oz
- Citrus Zest Mix - 1 tablespoon
- Herb Bouquet - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Flaky sea salt - ½ spoons
Step by Step guide
Step 1
In a small bowl, combine lemon juice, vinegar, sugar, and two tablespoons of water.
Step 2
Crush a clove of garlic with finely grated lemon zest and sea salt using a food processor or mortar and pestle until it forms a smooth paste. Combine this with the vinegar and lemon juice mixture. Gradually pour in the rapeseed oil, and season with salt and pepper to taste.
Step 3
Remove the outer leaves from the head of lettuce, and tear the remaining leaves into pieces by hand. In a large bowl, combine the lettuce with peeled and thinly sliced radishes and finely chopped herbs (any, to taste), then drizzle with the dressing.
Step 4
Arrange the salad on plates and garnish with thin slices of Parmesan.
