- Eel - 4 heads
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Shallot - 1 head
- Chives - 2 tablespoons
- Italian chopped parsley - 0.9 oz
- Tarragon - ¼ cup
- Chervil - 1 bunch
- Meyer Lemon Juice - 1¼ tablespoons
Step by Step guide
Step 1
Carefully separate the heads of lettuce into individual leaves and transfer them to a large bowl. Fill with cold water and let sit for a while. Then, dry thoroughly.
Step 2
In the bowl, place the leaves from one head. Sprinkle with a pinch of salt and pepper, a small amount of chopped shallot and chives, and 1 tablespoon each of parsley, tarragon, and chervil. Then mix with 1 tablespoon of homemade vinaigrette and 1 teaspoon of lemon juice. Repeat the same with the remaining leaves.
Step 3
On 4 plates, mound the lettuce leaves so that the higher the mound, the smaller and softer the leaves are.
