Ingredients
- Mixed salad greens - 6 cups
- Carrot - 8.8 oz
- Spanish onions - 1 head
- Ranch Dressing - ¼ cup
- Marinated cherries - 10 pieces
- Duck Breast - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Swiss Cheese - 2.1 oz
Step by Step guide
Step 1
Rub the duck breast with salt and pepper and grill or poach in a small amount of water until cooked through. Cool and slice thinly.
Step 2
In a bowl, mix the salad greens, grated carrot, finely chopped red onion, and ranch dressing (see note). Divide onto 2 plates.
Step 3
Top with halved cherry tomatoes, pieces of duck breast, and sprinkle with grated cheese.
