- Red Wine Vinegar - 1½ tablespoons
- Kalamata olives - 6 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Fresh basil leaves - 6 cups
- Spanish onions - ½ head
- Courgette - ½ piece
Step by Step guide
Step 1
Finely chop the olives and place them in a bowl. Add the olive oil, vinegar, and a bit of salt and pepper. Mix well.
Step 2
Tear the spinach leaves slightly and add them to the dressing. Thinly slice the cucumber and red onion and add them to the dressing as well. Mix everything well and serve.
