Linguine with Lemon
Ingredients
- Lemon - 2 pieces
- Green Tagliatelle Pasta - 17.6 oz
- Vodka - 3 fl oz
- 10% cream - 8 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cook the pasta al dente in salted water (al dente pasta is slightly firm to the bite).
Step 2
While the pasta is cooking, grate the zest from one lemon.
Step 3
Remove the membrane from the lemon segments and cut the flesh into small cubes.
Step 4
Juice the second lemon and set aside.
Step 5
In a skillet, combine the cream, vodka, and diced lemon, and bring to a gentle boil. Wait for the sauce to thicken.
Step 6
Remove from heat and slowly stir in the lemon juice.
Step 7
Return to heat for 1–2 minutes, stirring constantly.
Step 8
Drain the cooked pasta and add it to the lemon sauce.
Step 9
Add 2 teaspoons of grated lemon zest, season with salt and pepper, and mix thoroughly.
Step 10
Transfer to a serving dish. For garnish, you can place a few rings of lemon zest on top and serve immediately.
