Description
Recipe from the show Food with Alex Smith, episode 18.
Ingredients
- Salad Potatoes - 70.5 oz
- Apple Wine - 17 fl oz
- Olive Oil - 3 fl oz
- Garlic - 1 clove
- Thyme - to taste
- Bay leaf - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat a little olive oil and a glass of wine in a cast iron pot (or another thick-bottomed pot).
Step 2
Do not peel the potatoes, wash them, and cut them in half, or into quarters if the potatoes are large.
Step 3
Place the potatoes in the pot, season with coarse sea salt, and add freshly ground pepper. Add 5-6 whole cloves of garlic, cut the fresh thyme sprigs (not finely), break the bay leaf, and add everything to the potatoes.
Step 4
Then drizzle the potatoes with olive oil and pour in another glass of wine. Stir and simmer until cooked.
Step 5
It is best served with salmon and salad: arrange a mixture of salad leaves (arugula, corn salad, Swiss chard) on a plate, drizzle with balsamic vinegar and olive oil.
Step 6
Thinly slice the salmon and place it next to the salad.
