Liver Cake with Two Different Fillings

Ingredients

  • Beef Kidneys - 17.6 oz
  • Onion - 2 heads
  • Carrot - 1 piece
  • Wheat Flour - 2 tablespoons
  • Chocolate eggs - 5 pieces
  • Garlic - 2 cloves
  • Mayonnaise - 8.8 oz
  • Hard Cheese - 3.5 oz
  • Potato - 1 piece
  • Salt - to taste
  • Pickled Cauliflower - 3 pieces
  • Herbs - to taste
  • White Pepper (whole) - to taste
  • Vegetable Oil - to taste

Step by Step guide

Step 1

Wash the fresh beef liver, dry it with a towel, and remove the membranes. Cut into medium-sized pieces and place in a food processor.

Step 2

Finely chop one onion and add it to the food processor. Grind the liver and onion until they form a more or less homogeneous mass.

Step 3

Add flour, 2 eggs, salt, and pepper to the food processor (with the liver and onion) and blend a little more. The mixture should resemble batter for pancakes.

Step 4

From the resulting batter, bake three thick pancakes — these will be the layers of the future cake. Let them cool.

Step 5

Finely chop the second onion and grate the carrot. Sauté the onion and carrot, then let them cool.

Step 6

Boil 3 eggs. Let them cool. Remove the yolks from two eggs and crumble them. Keep one egg for decoration.

Step 7

Finely chop the garlic (you can lightly crush it) and mix it with mayonnaise.

Step 8

Mix a portion of the mayonnaise with garlic (about one quarter) with the crumbled yolks to create a homogeneous mass. Place it in the refrigerator.

Step 9

Finely chop the egg whites (from which the yolks were removed, i.e., 2 egg whites) and mix them with another portion of mayonnaise (also about one quarter).

Step 10

Mix the cooled carrot and onion with another quarter of mayonnaise.

Step 11

On a plate, place the liver pancake, spread the mixture of carrot and onion with mayonnaise on top. Cover with another pancake, which should be spread with the egg white and mayonnaise mixture, then cover with a third pancake, which should be spread with the remaining mayonnaise.

Step 12

Slice the tomato into thin rounds. Slice the egg reserved for decoration into rounds (using an egg slicer is convenient). Cut the pickled cucumbers into thin half-moons. Grate the cheese.

Step 13

Arrange the tomato slices on the cake in the shape of flowers, place the egg slices on top, make leaves from the cucumbers, and sprinkle the free space with cheese. Pipe a neat border of yolk-mayonnaise cream around the edge of the cake. Decorate with red pepper and herbs.

Step 14

Before serving, the cake should sit in the refrigerator for at least a couple of hours.
