Liver Pâté with Green Onions
Ingredients
- Beef Kidneys - 2 lbs
- Onion - ½ kg
- Carrot - ½ kg
- Scallions - 1 bunch
- Butter - 4.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Nutmeg - to taste
- Brandy - 1 tablespoon
- Cheese Spread - 1.8 oz
Step by Step guide
Step 1
Cut the liver, carrot, and onion into large pieces — cubes of 2–3 cm. Sauté over high heat in half of the butter until browned, then reduce the heat and simmer until cooked through, adding a little boiling water as needed.
Step 2
Allow to cool, then grind in a meat grinder together with the remaining butter, preferably twice. Season with salt and pepper, add nutmeg and brandy, and mix well.
Step 3
Form balls the size of walnuts, roll them in finely grated cheese, and place on a plate sprinkled with finely chopped green onions.
