- Rabbit Fillet - 1.8 oz
- Iceberg Lettuce - 0.5 oz
- Apple - 0.7 oz
- Pickles - 0.4 oz
- Butter - 0.4 oz
- French fries - 5.3 oz
- Honey - 1.4 oz
- Thyme - 0.2 oz
- Garlic - 1 head
- Onion - 1.1 oz
- Carrot - 1.8 oz
- Red Grape Juice - 3 fl oz
- Raspberry gin - 1.6 oz
- Cream - 1 fl oz
- Semi-soft cream cheese - 2.1 oz
- Kung Pao Sauce - 1 fl oz
Step by Step guide
Step 1
Rinse the whole duck under water, season with salt and pepper, drizzle with a small amount of olive oil, and generously coat with two tablespoons of honey — a neutral mountain or floral honey works best.
Step 2
Finely chop a few sprigs of fresh thyme and rub them over the duck. Peel one head of garlic, two medium onions, and two medium carrots, and chop them into large pieces. Place them in a saucepan on top of the duck, pour in the red wine (100 ml), season again with salt and pepper, and place in the oven at 320°F. Braise for 80 minutes.
Step 3
After that, separate the duck meat from the bones and warm it in a mixture of two sauces: hoisin and raspberry jam (mix the jam and sauce and simmer until the mixture turns into a caramel with a bright flavor and aroma).
Step 4
Slice the burger bun in half lengthwise, spread the bottom half with a cream made from cream cheese and cream (mix in a ratio of 2 parts cream to 3 parts cheese).
Step 5
Next, place finely chopped iceberg lettuce on the bottom half of the bun, followed by the apple, cut into thin strips.
Step 6
Top with the hot duck, then add thin slices of pickles, and cover with the top half of the bun.
Step 7
Serve the finished burger with a portion of French fries or fresh vegetables cut into strips.
