Lula Kebab with Chopped Beef
Ingredients
- Beef chuck roast - 2 lbs
- Fat Tail Fat - 12.3 oz
- Onion - 10.6 oz
- Black Cumin (Cumin) - 1.1 oz
- Coriander essential oil - 1.8 oz
- Salt - 0.7 oz
- Green peppercorns - 0.4 oz
Step by Step guide
Step 1
Clean the meat from membranes, cut it into small pieces, and chop it with a cleaver to achieve a sticky minced meat. If you don't have a cleaver, you can use a meat grinder with a fine grate.
Step 2
Dice the onion and fat into small cubes.
Step 3
Grind the cumin, coriander, pepper, and salt in a mortar.
Step 4
Mix the spices with the onion, add the fat, and mix again.
Step 5
Add this mixture to the meat and knead thoroughly.
Step 6
Place the minced meat in a container in an even layer, pressing out the air, cover with a lid, and refrigerate for 3 hours.
Step 7
Form sausages weighing 100-150 g from the minced meat and mold them onto skewers. If the minced meat sticks to your hands, wet your hands with water.
Step 8
Grill over an open flame, turning frequently, until a nice crust forms.
Step 9
Serve with any vegetable salad and fresh herbs.
