Ingredients
- Smoked haddock fillet - 8 pieces
- Oranges - 3 pieces
- Celery stalk - 4 pieces
- Garlic - 2 cloves
- Olive Oil - 1 fl oz
- Champagne Vinegar - 0 fl oz
- Bay leaf - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Grate the zest from one orange. Peel all the oranges and carefully segment the flesh with a sharp knife. Slice the celery stalks thinly and blanch them in boiling salted water for one minute.
Step 2
In a bowl, combine the zest, segments of orange flesh, celery, a bit of olive oil, and sherry vinegar. Season with salt and pepper to taste.
Step 3
In a large skillet, heat olive oil over medium heat, then gently simmer a bay leaf and a peeled garlic clove in the oil to infuse it with their flavors.
Step 4
Season the mackerel fillets with salt and pepper, then fry the pieces of fish in oil on both sides for about two minutes each.
Step 5
Serve the cooked fish with a salad of orange and celery.
