Mackerel with Vegetables
Ingredients
- Mackerel - 1 piece
- Fennel - 1 piece
- Tomatoes - 2 pieces
- Garlic - 3 cloves
- Lemon - ½ piece
- Thyme - 1 bunch
- Pickled capers - 5.3 oz
- Olive Oil - 8 tablespoons
- Salt - to taste
Step by Step guide
Step 1
Prepare the marinade: chop the capers, slice the garlic thinly, chop the thyme, zest the lemon and squeeze out the juice, add 3 tablespoons of olive oil, and season with salt.
Step 2
Remove the head from the mackerel, rinse the body, pat dry, and carefully fillet one side with a sharp knife. Gently remove the backbone from the other half. Sprinkle the resulting fillet with salt.
Step 3
Heat oil in a skillet and fry the fillet on both sides (starting with the skin side to prevent the fish from falling apart).
Step 4
Rinse the fennel, pat dry, and slice it thinly lengthwise. Cut the tomatoes into rounds. Sauté the fennel in the remaining oil. Add the tomatoes and sauté everything together, making sure the tomatoes do not fall apart.
Step 5
Arrange the vegetables on plates, top with the mackerel fillet, and drizzle with the marinade.
