- Lingonberry - 1.8 oz
- Salt - to taste
- Saffron - a pinch
- Ground Black Pepper - to taste
- Butter - 1.1 oz
- Sugar - 1.1 oz
Step by Step guide
Step 1
Trim the tendons and excess fat from the duck breast. Make a crosshatch incision in the skin. Season with salt and pepper.
Step 2
Place the fillet, skin side down, on a hot skillet and sear on both sides, then finish cooking in the oven.
Step 3
Peel the apples, dice them into cubes, and sauté in butter with sugar and saffron.
Step 4
Pour the wine into a saucepan, add sugar, lingonberries, a pinch of salt, and reduce until you achieve a thick consistency.
Step 5
Arrange the sliced fillet and apples on a plate, then drizzle with the sauce.
