Ingredients
- Beef - 17.6 oz
- Conchiglie Pasta - 9 pieces
- Onion - 1 piece
- Garlic - 1 clove
- Melted Cheese - 4.2 oz
- Pickled Chanterelles - 4 pieces
- Grated Pecorino Pepato Cheese - to taste
- Potato - 1 piece
- Chicken Egg - 1 piece
- Wheat Flour - 3 tablespoons
- Butter - 1.4 oz
- Olive Oil - 2 tablespoons
- Milk - 13 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat a skillet and sauté the diced onion and garlic in olive oil.
Step 2
Slice the champignon mushrooms and add them to the onion and garlic for 5–8 minutes.
Step 3
Add the minced meat and sauté for about 15 minutes, stirring occasionally. Once it's ready, remove it from the heat and let it cool so that you can easily fill the cannelloni.
Step 4
Melt the butter in a saucepan.
Step 5
Add the flour and sauté it slightly.
Step 6
Gradually pour in the cold milk while continuously stirring to thicken the sauce and avoid lumps. Then remove the saucepan from the heat. A small note: I ran out of milk and had to improvise with cream. The proportions turned out to be 100 ml of milk and 300 ml of 10% fat cream. By the way, it didn't turn out too fatty, and the thickness was good.
Step 7
Drop the cannelloni into salted water for four minutes. After that, drain the water and separate the pasta so they don't stick together and retain their shape. I don't recommend stacking them on top of each other, as they will become flattened.
Step 8
Preheat the oven to 356°F. Take a baking dish, grease it with oil, and fill the cannelloni with the filling.
Step 9
Next, pour the béchamel sauce over it, and top with the remaining champignons, tomatoes, and slices of mozzarella. The cooking time in the oven is 30 minutes. Ten minutes before it's done, take the dish out and sprinkle it with grated parmesan; you can also garnish it with parsley or basil. Then put the dish back in the oven for the remaining 10 minutes. Serve the cannelloni hot.
