Manicotti in Tomato Sauce
Ingredients
- Olive Oil - 2½ tablespoons
- Garlic - 2 cloves
- Onion - 1 piece
- Parsley - 0.6 oz
- Passata Tomato Sauce - 5 tablespoons
- Basil - 0.7 oz
- Salt - to taste
- Green peppercorns - to taste
- Crushed Tomatoes in Their Own Juice - 28.2 oz
- Ham - 3.5 oz
- Parmesan Cheese - 3.5 oz
- Melted Cheese - 3.5 oz
- Chocolate eggs - 4 pieces
- Wheat Flour - 1 cup
- Ricotta cheese - 1 cup
Step by Step guide
Step 1
For the sauce, sauté the chopped onion and garlic over medium heat until soft, about 5 minutes. Add the tomato paste and cook, stirring, for about 2 minutes. Add 2 tablespoons of finely chopped parsley, basil, tomatoes, and 0.5 cups of water, season with salt and pepper, bring to a boil, reduce the heat to low, and cook, stirring, for about 45 minutes. Remove from heat and set aside.
Step 2
For the filling, mix 2 tablespoons of chopped parsley, finely chopped ham, diced mozzarella, ricotta, 1/4 cup of parmesan, 1 egg, season with salt and pepper, and stir until well combined. Set aside.
Step 3
For the dough, whisk together 3 eggs, flour, salt, and 1 1/4 cups of water until smooth, and let rest for 20 minutes.
Step 4
Preheat the oven to 392°F.
Step 5
Heat a non-stick frying pan for pancakes and make 16 pancakes from the batter.
Step 6
Pour half of the sauce into a baking dish and set aside.
Step 7
Place 2 tablespoons of filling in the center of each pancake and roll them up. Place the rolls seam side down in the dish with the sauce until the dish is full. Pour the remaining sauce on top and sprinkle with parmesan. Bake until golden brown, about 25 minutes. Garnish with herbs.
