Ingredients
- Salad Potatoes - 7.1 oz
- Chinese green beans - 17.6 oz
- Onion - 1 piece
- Veal Tenderloin - 2 pieces
- Bacon - 1.4 oz
- Garlic - 2 cloves
- Parsley - 1 bunch
- Thyme - 2 sprigs
- Olive Oil - 2 tablespoons
- Red Grape Juice - 4 fl oz
- Campbell's Beef Broth - 5 fl oz
- Butter - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 212°F. Place the beans in boiling salted water and cook for eight minutes until they are still crisp. Immediately cool them in ice water.
Step 2
Dice the onion and bacon. Heat the butter in a large skillet and sauté the bacon and onion until golden brown. Then transfer to a separate dish.
Step 3
Peel the potatoes and slice them into 5 mm thick rounds. In the remaining melted butter, fry the potatoes over medium heat until golden on all sides.
Step 4
Wash the meat and pat it dry, season with salt and pepper. Place in the skillet and sear on both sides for three minutes each, then transfer to a plate. Peel the garlic. Wrap the fillet in aluminum foil with the garlic, thyme, and rosemary. Place the meat in the oven and let it rest. Sauté the remaining mixture with red wine and beef broth.
Step 5
Wrap the beans in bacon, fry in the skillet, and then simply bake in the oven with the meat for 10–15 minutes until the bacon is crispy.
Step 6
Then mix the sauce with cold butter and season with salt and pepper. Pour the bacon and onion over the potatoes. Serve the beef and potatoes on plates.

Serve with sauce and garnish.
