- Sugar - 1 tablespoon
- Water - 8 fl oz
- Dry yeast - 0.2 oz
- Wheat Flour - 12.3 oz
- Salt - 1 tablespoon
- Olive Oil - 2 spoons
- Garlic - 2 cloves
- Baking Tomatoes - 14.1 oz
- Basil - 2 spoons
- Passata Tomato Sauce - 2 spoons
- Parmesan Cheese - 1.2 oz
- Melted Cheese - 3.5 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the yeast and sugar in a bowl and mix with 4 tablespoons of warm water. Let it sit in a warm place for 15 minutes until the mixture becomes frothy.
Step 2
Combine the flour with salt and make a well in the center. Add 1 tablespoon of oil, the yeast mixture, and the remaining water. Use a wooden spoon to knead the dough.
Step 3
Place the dough on a floured surface and knead for 4–5 minutes. Return the dough to the bowl, cover it with a towel, and let it rise for 30 minutes until it doubles in size.
Step 4
Knead the dough for another 2 minutes, stretch it with your hands, then place it on a baking sheet, using your fingers to stretch the edges for a more even shape. The dough should be rolled out to a thickness of no more than 6 mm, as it will rise further during baking.
Step 5
To make the filling, place the chopped tomatoes, crushed garlic, basil, a tablespoon of olive oil, and salt and pepper to taste into a large skillet. Simmer for 20 minutes until the sauce begins to thicken. Add the tomato paste and let it cool slightly.
Step 6
Spread the filling over the base, sprinkle with chopped mozzarella and grated Parmesan, and bake in a preheated oven at 392°F for 20–25 minutes. Serve hot.
