Description
You can substitute Margilan radish with daikon. You can use either boiled or canned beans. You can replace watercress with mustard or radish sprouts. Use the smallest leaves from the heart of the Chinese cabbage.

- Margilan Radish - 1 piece
- Radish - 0.1 oz
- Beans - ½ cup
- Watercress - 1 bunch
- Olive Oil - 3 tablespoons
- Chinese green beans - 1.8 oz
- Meyer Lemon Juice - 1 tablespoon
- Honey - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste

Step 1
Slice the radish — it's best to use a vegetable peeler, which will give you thin, translucent 'feathers'. Slice the radish thinly with a regular knife, add the beans, watercress, and finely torn leaves of cabbage.
Step 2
Prepare the dressing: mix olive oil, lemon juice, and honey well, season with salt and pepper, dress the salad, and serve. If you find pumpkin seeds in your pantry, sprinkle them on top of the salad for an extra touch.
