  • Flaky sea salt - 4 tablespoons
  • Sugar - 2 tablespoons
  • Dill - 0.7 oz
  • Citrus Zest Mix - to taste
  • Cognac - 1 tablespoon

Step by Step guide

Step 1

Rub the fish fillet with salt and sugar. Sprinkle with lemon zest and dill. Drizzle with cognac. Cover the fillet with plastic wrap, slightly tearing it to allow air to circulate.

Step 2

Place in the refrigerator for a few hours: at least 4 hours for a lightly salted taste, or preferably overnight.
