Ingredients
- Poultry - 2 lbs
- Champagne Vinegar - 4 tablespoons
- Vegetable Oil - 2 tablespoons
- Olive Oil - 4 tablespoons
- Apple Wine - ½ cup
- Meyer Lemon Juice - 4 tablespoons
- Wheat Flour - 3 tablespoons
- Garlic - 2 cloves
- Bay leaf - 1 piece
- Thyme - to taste
- Ground coriander - a pinch
- Salt - a pinch
- Ground Black Pepper - a pinch
Step by Step guide
Step 1
Cut the chicken into 10 pieces, place in a deep bowl, and pour over the marinade: olive oil, vinegar, lemon juice, wine, minced garlic, bay leaf, thyme, pepper, and coriander. Cover with a lid and marinate overnight (or at least for 2 hours).
Step 2
Pat the chicken pieces dry with a paper towel, season with salt and pepper. Place flour in a paper bag, add the chicken pieces, and shake to coat evenly with flour.
Step 3
Fry the chicken in a skillet until golden brown (in 1 cm of oil). Preheat the oven to 180°C (350°F), place the chicken pieces on a baking sheet, and cook for 40 minutes until crispy. Serve with tomatoes, salad, and herbs.
