Marinated Goose Salad with Fig
Ingredients
- Coarse Salt - 3 spoons
- Thyme - 6 stalks
- Garlic - 4 cloves
- Shallot - 1 head
- Ground Black Pepper - to taste
- Duck Fat - 28.2 oz
- Arugula - 3.5 oz
- Olive Oil - 1 fl oz
- Black Fig - 8 pieces
- Goose Leg - 4 pieces
- Balsamic Vinegar - 3 spoons
Step by Step guide
Step 1
Rub the goose legs with salt, chopped thyme, garlic, shallots, and ground pepper, and place them in a dish. Cover and refrigerate for 12 hours.
Step 2
Preheat the oven to 212°F. Rinse the legs and pat them dry. Return them to the baking dish. Arrange the fat around the legs and roast until tender for five hours. Let cool.
Step 3
Remove the legs from the fat, discard the skin and bones. Slice the meat, then toss it with arugula, oil, vinegar, chopped figs, and pepper.
