Marinated Kale Salad
Ingredients
- Kale - 15.9 oz
- Olive Oil - 2 tablespoons
- Coarse Salt - to taste
- Red Onion - 1 head
- Sumac - 1 teaspoon
- Toasted sesame seeds - ½ teaspoon
- Lemon Juice - 1 tablespoon
- Garlic - 4 cloves
- Dijon Mustard - 2 teaspoons
- Canned chickpeas - 14.1 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large bowl, combine the kale leaves with olive oil and 1 teaspoon of salt. Mix until well combined.
Step 2
Let the ingredients cool to room temperature for about an hour, allowing the kale to wilt slightly.
Step 3
Meanwhile, place the onion in a medium bowl and cover with cold water. Let it sit for 15 minutes.
Step 4
Rinse the onion several times in water, then gently dry using a salad spinner.
Step 5
Combine the onion with sumac and sesame seeds. Season with salt to taste.
Step 6
In a small bowl, mix the lemon juice and mustard. Once the kale begins to wilt, combine the kale, lemon dressing, and chickpeas in a large bowl.
Step 7
Season with salt and pepper. Serve the salad garnished with the onion in sumac.
