Ingredients
- Pork Blood - 28.2 oz
- Fig - 4 pieces
- Meyer Lemon Juice - 0 fl oz
- Rosé Dry Wine - 3 fl oz
- Fig Jam - 1 tablespoon
- Thyme - 1 bunch
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rub the pork with salt and pepper (bone-in pork works best).
Step 2
Strip the leaves from the thyme.
Step 3
Place the pieces of meat in a container, sprinkling thyme on both sides.
Step 4
Mix the lemon juice with the wine, add the fig jam, and stir. Drizzle the mixture over the meat.
Step 5
Refrigerate for at least 6 hours.
Step 6
Slice the figs (fresh figs are essential) into rounds about 4–5 mm thick and place them on the meat.
Step 7
Preheat the oven to 428°F.
Step 8
Place the meat on a baking sheet, put it in the oven for 10–15 minutes, then reduce the temperature to 180–374°F and bake, basting with the marinade, for about 1 hour to 1 hour 20 minutes.
